Caprese Pasta
This Caprese Pasta is the perfect refreshing summer dish—bright, flavorful, and quick to prepare. Juicy cherry tomatoes are blistered in a buttery olive oil base, then gently smashed to release their sweet, tangy juices. Fresh basil and cubes of creamy mozzarella are tossed in with perfectly al dente pasta to create a dish bursting with Mediterranean flavor. - Step 1
Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
- Step 2
In a pan over medium heat, add olive oil and butter. Once melted, add cherry tomatoes and season with salt and pepper.
- Step 3
Cook until tomatoes are tender, then gently smash them to release their juices. Let cook for a few more minutes.
- Step 4
Add cooked pasta, mozzarella cubes, and chopped basil to the pan. Stir to combine.
- Step 5
Add a splash of pasta water and mix until everything is evenly coated and slightly saucy.
- Step 6
Top with Parmesan and more basil before serving.
