Instructions

Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.

In a pan over medium heat, add olive oil and butter. Once melted, add cherry tomatoes and season with salt and pepper.

Cook until tomatoes are tender, then gently smash them to release their juices. Let cook for a few more minutes.

Add cooked pasta, mozzarella cubes, and chopped basil to the pan. Stir to combine.

Add a splash of pasta water and mix until everything is evenly coated and slightly saucy.
