Caramelized Onion Alfredo Pasta
Instructions
1
In a large pan over medium heat, melt butter with a dash of olive oil.
2
Add onion rings and season with salt and pepper. Cook, stirring occasionally, for 30–60 minutes until deeply caramelized. Add a little water as needed to prevent burning.
3
Once onions are caramelized, stir in minced garlic and cook until fragrant.
4
Add dry pasta and stir to coat with the onion mixture.
5
Pour in broth and bring to a simmer. Season with garlic powder, salt, and pepper.
6
Cook pasta in the broth for 10–12 minutes, stirring occasionally, until al dente and most of the liquid is absorbed.
7
Add heavy cream and stir. Simmer briefly, then add cream cheese and whisk until smooth.
8
Stir in Parmesan cheese and mix until creamy. Serve hot with extra Parmesan on top.

Tips & Tricks (5)
- Low and Slow Caramelization 🧅Cook sliced onions on medium-low heat for 30-40 minutes, stirring occasionally, to develop deep golden color and complex sweetness—rushing this step compromises the entire dish's flavor foundation.
- Cream Cheese Prevents Splitting 🧈Add cream cheese before heavy cream to create an emulsified base that won't break or separate, ensuring a silky, stable sauce even if temperatures spike.
- Reserve Pasta Water for Sauce 💧Save 1 cup of starchy pasta cooking water to thin the sauce to perfect consistency—the starch helps the cream coat the pasta evenly while maintaining richness.
- Finish with Cold Butter 🧈Whisk in a knob of cold butter at the very end off-heat to add glossy shine and luxurious mouthfeel that elevates the sauce from good to restaurant-quality.
- Toast Garlic Separately ⏱️Mince garlic and toast it briefly in a separate pan before adding to prevent browning during long caramelization, which would create bitter flavors and muddy the delicate sauce.
