Tips & Tricks (5)
- Roast Squash Until Deeply Caramelized 🎃Roast butternut squash at 425°F until the flesh is dark golden and slightly caramelized at the edges, which intensifies natural sweetness and creates depth of flavor that elevates the entire sauce.
- Use Reserved Pasta Water to Achieve Silky Texture 💧Gradually whisk in pasta water instead of only milk to reach your desired consistency—the starch creates a naturally thicker, more luxurious sauce that clings beautifully to cavatappi.
- Crisp Your Sage Leaves Separately 🍃Fry fresh sage leaves in butter until they're paper-thin and brittle, then store separately until plating; this preserves their texture and prevents them from becoming soggy in the creamy sauce.
- Toast Breadcrumbs in Sage-Infused Butter 🥖Cook your breadcrumbs in the same butter you used for sage to infuse them with that herbaceous flavor, creating a cohesive, crunchy topping that complements the dish's overall profile.
- Blend Squash While Warm for Smoothness ✨Purée the roasted squash while it's still warm and steaming—this ensures the smoothest, most velvety consistency without lumps, and warm ingredients incorporate better with the butter and cream base.
