Chicken Bacon Ranch Pasta
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain.
2
In a large skillet, heat olive oil and cook chopped bacon until crispy. Remove and set on paper towels.
3
Season chicken with salt, pepper, paprika, 1/4 tsp garlic powder, and 1/4 tsp onion powder.
4
In the same skillet, cook seasoned chicken in bacon grease until golden and cooked through. Remove and set aside.
5
Add butter to the same skillet. Sauté diced onion and minced garlic until fragrant, about 2 minutes.
6
Pour in heavy cream. Season with remaining garlic powder, onion powder, and ranch seasoning. Simmer for 3–5 minutes.
7
Add cheddar cheese, 1/2 cup mozzarella, and Parmesan. Stir until smooth and melted.

Tips & Tricks (5)
- Master the Pasta Water Ratio 💧Reserve at least 1 cup of starchy pasta water before draining—this is liquid gold for adjusting your cream sauce consistency and helping the cheese emulsify smoothly without becoming too thick or broken.
- Render Bacon Perfectly for Maximum Flavor 🥓Cook bacon low and slow until it's uniformly crispy (not just brown), then save 2-3 tablespoons of the rendered fat to sauté your onions and garlic—this adds incredible depth that regular olive oil cannot replicate.
- Bloom Your Seasonings in Butter 🧈Toast your minced garlic, garlic powder, onion powder, and paprika in melted butter for 30-45 seconds before adding cream—this releases volatile oils and prevents raw spice flavors that can dominate the dish.
- Temper Your Cream Sauce Temperature ⚠️Keep your sauce on medium or medium-low heat when adding cream and cheese to prevent the dairy from breaking or the cheese from becoming grainy—patience here ensures a silky, luxurious finish.
- Combine Cheeses Strategically for Layered Flavor 🧀Add cheddar and mozzarella to the hot sauce off-heat, stirring gently until melted, then toss with pasta before finishing with fresh Parmesan—this prevents overheating the delicate cheeses while building complex flavor layers.
