Instructions
1
Preheat the oven to 350℉. Grease a 9X9-inch baking pan with non-stick cooking spray or butter or line with parchment paper.
2
In a large bowl, stir together the melted butter, sugar, brown sugar, egg, and vanilla until fully incorporated. Add the flour, oats, baking powder, and salt and stir just until no streaks of flour remain. Fold in the chocolate chips.
3
Spread the batter into the prepared baking pan, spreading it well into the corners of the pan and smoothing the top as best as you can. Bake in the preheated oven for 25-30 minutes or until lightly golden. Let cool at least slightly before serving. Serve as is or with ice cream or whipped cream. Enjoy!

Tips & Tricks (5)
- Brown Your Butter 🧈Melt the butter until it turns golden brown with a nutty aroma before mixing into your batter—this adds rich, complex flavor that elevates the entire bar.
- Toast Your Oats 🌾Lightly toast the rolled oats in a dry skillet for 2-3 minutes before adding to the dough to enhance their nutty flavor and prevent a raw, floury taste.
- Chill the Dough 🧊Refrigerate your cookie dough for at least 30 minutes before pressing into the pan—this prevents excessive spreading and ensures chewy, perfectly textured bars.
- Nest Your Chocolate Chips 🍫Press chocolate chips into the batter after spreading it in the pan rather than mixing them in; this keeps them intact and creates beautiful melted pockets throughout.
- Cut While Warm ✂️Cut the bars into squares while they're still slightly warm from the oven (5-10 minutes cooling)—they'll cut cleanly and set perfectly without crumbling or sticking.
