Chocolate Peanut Butter Oat Cups
Oat Base Layer
Peanut Butter Layer
Chocolate Topping
Instructions
1
In a medium mixing bowl, add the ingredients for the oat base layer. Stir until well combined. Transfer mixture into 8 cavities of a silicone muffin tray or a metal muffin tray with muffin liners. Press down firmly. Place in the freezer for 15 minutes.
2
In the meantime, make the peanut butter layer. In a small bowl, add peanut butter and maple syrup and stir until smooth. Taste and add another tablespoon of maple syrup if you want it sweeter. Spread over the oat bases.
3
Heat chocolate chips and coconut oil in a small bowl in the microwave for 30 second intervals, stirring in between, until melted and smooth. Pour the melted chocolate over the peanut butter layer. Place in the freezer for 1-2 hours or in the fridge for 3-4 hours, until firm.
4
Optionally drizzle with more peanut butter or melted Biscoff cookie butter (my favorite!) and a sprinkle of flaky sea salt. Enjoy!

Tips & Tricks (5)
- Coconut Oil Temperature Control 🌡️Melt coconut oil gently over low heat or use a double boiler to prevent it from smoking and maintain the delicate flavor balance with chocolate and peanut butter.
- Peanut Butter Consistency Trick 🥜Slightly warm your peanut butter before spreading to ensure it's spreadable and creates even, uniform layers without tearing the oat base underneath.
- Chocolate Tempering for Snap 🍫Add a small amount of coconut oil to your dark chocolate chips (1 teaspoon per 4 ounces) when melting to achieve a perfectly glossy finish and satisfying snap when you bite into the cups.
- Freezer Timing Precision ⏱️Freeze each layer for exactly 10-15 minutes between additions rather than longer, ensuring proper adhesion and preventing the peanut butter layer from becoming too hard to spread evenly.
- Sea Salt Enhancement 🧂Sprinkle flaky sea salt on the chocolate layer immediately after pouring while still warm, allowing it to slightly sink in and create a sophisticated sweet-salty contrast that elevates the entire flavor profile.
