For the Oat Layer
For the Peanut Butter Layer
For the Chocolate Topping
Instructions
1
To make the oat layer, stir together oats, peanut butter, maple syrup, and salt until well combined.
2
Spray a muffin tin with cooking spray or line with muffin liners, or use a silicone muffin tray. Divide oat mixture into eight muffin cups and press down.
3
To make the peanut butter layer, stir together peanut butter and maple syrup. Spread on top of oat layer.
4
Melt chocolate with coconut oil in a microwave in 30 second intervals, stirring often, until smooth. Pour melted chocolate on top of the peanut butter layer and spread evenly. Place in freezer for 20 minutes or until chocolate hardens.
5
Drizzle more peanut butter on top and sprinkle with sea salt flakes. Freeze for 3-4 hours to firm up and hold their shape. Best stored in freezer. Let defrost for about 10 minutes before serving. Enjoy!

Tips & Tricks (5)
- Temper Your Chocolate Properly 🍫Melt chocolate chips gently over a double boiler or in 30-second microwave intervals, stirring between each, to prevent seizing and achieve a smooth, glossy coating that sets beautifully.
- Toast Your Oats for Depth 🌾Lightly toast the oats in a dry pan for 2-3 minutes before mixing with peanut butter and maple syrup to enhance their nutty flavor and prevent a raw, doughy taste in the base layer.
- Balance Your Sea Salt Strategically 🧂Reserve the flaky sea salt exclusively for the top chocolate layer where it will dissolve slightly and create an elegant contrast; this prevents the oat base from becoming too salty.
- Chill Between Layers for Structure 🧊Freeze the oat base for at least 30 minutes and the peanut butter layer for 20 minutes before adding the next layer; this prevents layers from mixing and ensures clean, defined separation.
- Use Parchment-Lined Muffin Tins 📋Line your muffin tin with parchment squares rather than paper cups for easier removal and a more professional presentation without any stick-on residue.
