In a medium bowl or mason jar, combine the zest and juice of 1 orange, 1 grapefruit, 1 lemon, and 1 lime.

Add ⅔ cup extra-virgin olive oil, 2 tablespoons honey, ½ teaspoon salt, 1 teaspoon Dijon mustard, and 1 tablespoon apple cider vinegar to the bowl or jar. Whisk or shake vigorously until well combined. If you prefer a smoother consistency, blend with an immersion blender.
