Crab Stuffed Mushrooms
Instructions
1
Preheat the oven to 375°F.
2
Line a baking sheet with aluminum foil and spray with nonstick cooking spray. Set aside.
3
Using clean hands, carefully remove the stems from the mushrooms and discard, or save for an alternative use.
4
Arrange the mushrooms on the baking sheet with the cavities facing up. Set aside.
5
Finely mince the scallion.
6
Place the crab meat, cream cheese, Parmesan, scallion, parsley, Old Bay seasoning, and garlic powder in a large mixing bowl. Set aside.
7
Place the crackers in a zip-top bag. Using a rolling pin or the bottom of a heavy glass, crush the crackers into coarse crumbs.
8
Add the cracker crumbs to the mixing bowl.
9
Using clean hands, mix until thoroughly combined.
10
With a small spoon and clean hands, stuff a generous tablespoon of filling into each mushroom. Pack the filling tightly, using enough so that the mushrooms are domed with stuffing.
11
Bake mushrooms on middle rack of oven until stuffing is nicely browned, 24-27 minutes.
12
Check to see that mushrooms are done. Remove from oven or add time as needed.
13
Allow the mushrooms to cool for 5-10 minutes before serving. Garnish with fresh thyme if you like. Leftovers may be refrigerated for up to two days.

Tips & Tricks (5)
- Remove Mushroom Gills for Perfect Texture 🍄Use a small spoon to gently scrape out the dark gills from the mushroom caps before stuffing—this creates more room for filling and prevents a watery, soggy final dish.
- Dry Your Crabmeat Thoroughly 🦀Pat your lump crabmeat with paper towels to remove excess moisture, which prevents the filling from becoming mushy and helps it bind together properly with the cream cheese.
- Toast Your Cracker Crumbs First 🥣Lightly toast the buttery cracker crumbs in a dry pan for 1-2 minutes before mixing into the filling to intensify their buttery flavor and maintain textural contrast against the creamy filling.
- Bloom Your Dried Herbs in Fat 🌿Mix the dried parsley and fresh thyme directly into softened cream cheese or melted butter before adding other ingredients—this releases their essential oils and distributes flavor evenly throughout the filling.
- Pre-Roast Mushrooms Briefly 🔥Roast the mushroom caps at 400°F for 5 minutes before stuffing to remove surface moisture and allow the filling to cook through while the mushrooms develop deeper flavor.
