Tips & Tricks (5)
- Toast Tomato Paste First 🍅Cook tomato paste in butter for 1-2 minutes before adding garlic to deepen its flavor and remove any tinny taste, creating a richer sauce foundation.
- Reserve Pasta Water Strategically 💧Save 1 cup of starchy pasta water before draining, then add it gradually to achieve the perfect sauce consistency that clings to noodles without becoming watery.
- Temper Cream to Prevent Curdling 🥛Add cream off the heat or slowly while stirring constantly, and ensure your sauce isn't boiling when incorporating it to prevent the cream from breaking or separating.
- Layer Cheese for Complex Flavor 🧀Add Parmesan off the heat while stirring gently to prevent clumping, then sprinkle mozzarella last so it melts smoothly into creamy pockets rather than becoming stringy or tough.
- Fresh Basil Timing is Critical 🌿Tear basil by hand and stir it in just before serving to preserve its delicate aroma and bright color; added too early, it darkens and loses its fresh, peppery notes.
