Instructions
1
Pat the fish dry with some kitchen paper and halve it or cut it into thick strips as desired. Season the fillets generously with salt and pepper on both sides.
2
Place the egg and mustard in a shallow bowl and whisk with a fork. Place the flour in a second bowl. In a third bowl, combine the breadcrumbs, oregano, and chili flakes. Lightly spray (or brush) the air fryer basket with oil.
3
First, coat the fish fillets in flour, then dip them in the egg and mustard mixture, and finally coat them in breadcrumbs until completely covered. Press the breadcrumbs on lightly with your fingers.
4
Place the breaded fish fillets side by side in the prepared air fryer basket so they don't touch each other and cook at 200°C for 10 minutes, turning them halfway through. (Thicker fish fillets will need about 12 to 15 minutes.) If desired, you can spray the fillets with a little oil before cooking.

Tips & Tricks (5)
- Double-Dredge for Maximum Crispiness 🥖After coating fish in the egg mixture, let it rest for 2 minutes, then dip again in breadcrumbs for an extra-thick, ultra-crispy exterior that won't shed during air frying.
- Pat Fish Completely Dry 💧Use paper towels to thoroughly remove all surface moisture from fillets before breading—this prevents steam buildup and ensures maximum crispiness in the air fryer.
- Emulsify Mustard into Egg Wash 🥄Mix Dijon mustard directly into your beaten egg to create a cohesive, flavorful binder that helps the breadcrumb coating adhere perfectly while adding depth to every bite.
- Don't Overcrowd the Basket 🧺Leave space between fillets so hot air circulates freely; cramped baskets create steamed rather than crispy fish, so work in batches if needed for optimal results.
- Toast Breadcrumbs Before Coating 🔆Lightly toast your breadcrumbs in a dry skillet for 2-3 minutes before breading to deepen their flavor and improve their crispiness factor in the air fryer.
