1/2
Double Chocolate Chip Cookies
Instructions
1
Line two baking sheets with silicone baking mats or parchment paper. Set aside.
2
Place the butter, granulated sugar, and brown sugar in a medium bowl. Use a mixer to beat on medium speed until well combined, about 1 minute.
3
Add the eggs and vanilla extract and continue to beat until smooth, about 30 seconds.
4
Add the flour, cocoa, cornstarch, baking soda, and salt to the bowl. Beat on low speed, scraping the sides of the bowl with a rubber spatula as needed, until a smooth dough forms. Fold in the chocolate chips.
5
Preheat the oven to 350°F.
6
Divide the cookie dough into 30 balls, using roughly 1 1/2 tablespoons of dough for each, and arrange them spaced 1 1/2 inches apart on the baking sheets. Transfer the sheets to the freezer for 10-15 minutes. Alternately, freeze the dough balls on a small tray or large plate and transfer to the baking sheets after freezing.
7
Sprinkle the top of each cookie with sea salt, if desired. Bake the cookies on middle rack of oven until puffy and edges are set, 15-17 minutes.
8
Check to see that cookies are done. Remove from oven or add time as needed.
9
Allow the cookies to rest on the sheets for 5-10 minutes, then transfer to a wire rack to cool completely before serving.

Tips & Tricks (5)
- Brown Your Butter First 🧈Toast the unsalted butter until it turns golden and nutty before mixing, adding rich depth that amplifies the cocoa flavor and creates a more complex cookie texture.
- Bloom Your Cocoa Powder 🍫Whisk the unsweetened cocoa powder with a tablespoon of hot water to create a paste before adding to your dough, which unlocks deeper chocolate flavors and prevents dry streaks.
- Chill Your Dough Strategically ❄️Refrigerate dough for at least 2 hours before baking to prevent spreading, allowing the cookies to stay chewy while the flavor compounds develop and intensify.
- Toast Your Chocolate Chips 🔥Lightly toast half your chocolate chips in a dry pan for 2-3 minutes before folding into dough to enhance their cocoa intensity and create pockets of deeper flavor throughout.
- Master the Flaky Salt Finish ✨Sprinkle flaky sea salt on cookies immediately after removing from the oven while chocolate is still warm, which cuts sweetness and creates an irresistible sweet-salty contrast.
