Double Chocolate Chip Cookies
Instructions
1
|
Line two baking sheets with silicone baking mats or parchment paper. Set aside.
2
|
Place the butter, granulated sugar, and brown sugar in a medium bowl. Use a mixer to beat on medium speed until well combined, about 1 minute.
3
|
Add the eggs and vanilla extract and continue to beat until smooth, about 30 seconds.
4
|
Add the flour, cocoa, cornstarch, baking soda, and salt to the bowl. Beat on low speed, scraping the sides of the bowl with a rubber spatula as needed, until a smooth dough forms. Fold in the chocolate chips.
5
|
Preheat the oven to 350°F.
6
|
Divide the cookie dough into 30 balls, using roughly 1 1/2 tablespoons of dough for each, and arrange them spaced 1 1/2 inches apart on the baking sheets. Transfer the sheets to the freezer for 10-15 minutes. Alternately, freeze the dough balls on a small tray or large plate and transfer to the baking sheets after freezing.
7
|
Sprinkle the top of each cookie with sea salt, if desired. Bake the cookies on middle rack of oven until puffy and edges are set, 15-17 minutes.
8
|
Check to see that cookies are done. Remove from oven or add time as needed.
9
|
Allow the cookies to rest on the sheets for 5-10 minutes, then transfer to a wire rack to cool completely before serving.

Tips & Tricks (5)
- Cocoa Powder Pro Tip 🍫Sift your cocoa powder and flour together to prevent clumping and ensure a smooth, even chocolate distribution in the cookies.
- Butter Temperature Trick 🧈Use room temperature butter that's softened but still cool to the touch for the perfect cookie texture - not too melty, not too firm.
- Chocolate Chip Scatter Technique 🍪Reserve some chocolate chips to press into the top of each cookie dough ball just before baking for a more visually appealing and chocolatey finished cookie.
- Chill for Flavor Bomb 🌡️Refrigerate the cookie dough for at least 30 minutes (or up to 24 hours) to allow flavors to develop and prevent excessive spreading during baking.
- Sea Salt Finish Magic 🧂Sprinkle a pinch of flaky sea salt on top of the cookies immediately after removing from the oven to enhance the chocolate's depth and create a gourmet flavor profile.
