Preheat the oven to 400°F.

Toss the red bell pepper and red onion with 1 tbsp olive oil and a pinch of salt. Place the seasoned veggies on a sheet tray and roast them in the oven for 15 minutes. Remove the veggies from the oven and toss them.

Mix the shrimp with 1 tbsp olive oil and the taco seasoning. Arrange the shrimp on top of the veggies and bake for 5-7 minutes or until the shrimp are cooked through.

To assemble a taco, pile some shrimp and roasted veggies on a tortilla and top with pico de gallo, guacamole, queso fresco, and hot sauce, if desired.
