Tips & Tricks (5)
- Reserve Pasta Water Before Draining 💧Always save at least 1 cup of starchy pasta water before draining—this liquid is essential for adjusting sauce consistency and helping it cling beautifully to the pasta without making it greasy.
- Temper Cream Cheese Away from Direct Heat 🧈Remove the pan from heat before adding cream cheese to prevent it from breaking or becoming grainy; stir it in gently until fully incorporated into the warm sauce.
- Build Flavor Layers with Garlic Timing ⏱️Sauté minced garlic in butter and olive oil for just 30-45 seconds until fragrant but not browned, as burnt garlic will create a bitter, unpleasant taste that ruins the entire sauce.
- Grate Parmesan Fresh and Add Off-Heat 🧀Always grate Parmesan cheese fresh from a block rather than using pre-grated cheese, and add it off the heat while stirring constantly to achieve a silky, lump-free sauce.
- Control Creaminess with Pasta Water Additions 🎯Add reserved pasta water in small increments (1-2 tablespoons at a time) while stirring to reach your desired sauce consistency, as too much will dilute the rich, creamy flavor.
