Tips & Tricks (5)
- Score the Surface for Maximum Glaze Absorption 🔪Make shallow diagonal cuts across the ham's surface before glazing to create pockets that trap the honey-mustard mixture, resulting in deeper flavor penetration and a caramelized crust.
- Apply Glaze in Layers During Cooking ⏱️Brush the glaze on the ham every 8-10 minutes rather than all at once; this builds multiple caramelized layers and prevents burning while ensuring even coating throughout cooking.
- Balance Your Glaze Sweetness with Acidity 🍯Use the apple cider vinegar to cut through the brown sugar and honey sweetness—taste your glaze before applying and adjust the ratio to prevent one-dimensional flavors and achieve sophisticated complexity.
- Let Ham Reach Room Temperature First 🌡️Remove the ham from refrigeration 30 minutes before air frying to ensure even cooking from edge to center and prevent the exterior from over-caramelizing before the interior heats through.
- Tent with Foil if Glaze Darkens Too Quickly 🫖If your glaze begins browning excessively before the ham is heated through, loosely cover with foil to slow caramelization while allowing steam circulation and continued moisture retention.
