Gluten Free Lemon Madeleines
For the lemon madeleines

Instructions

First, preheat oven to 350 degrees Fahrenheit and heavily grease a Madeleine pan with nonstick spray.

Then, whisk eggs in a bowl for 2 minutes or until light and frothy.

Sift almond flour, coconut flour, and tapioca flour into a large mixing bowl. Then, add eggs and remaining Madeleines ingredients.

Stir until combined. Batter will be thick.

Use a spoon to fill Madeleine molds about 3/4 of way full (see picture above).

Next, bake for 12 to 14 minutes or until edges are golden and middles have puffed up.

Remove from oven and cool.

To make the glaze, melt coconut butter. Stir in lemon juice.

Spoon glaze over the cooled Madeleines.
