Guacamole? Chicken Salad? It’s both! This Guacamole Chicken Salad is so stupid good. Made with fresh avocados, cilantro, lime, jalapeño, chicken, spices, and a few other ingredients, it’s basically California in a bowl. We love making a double batch of this for visiting friends and family. It always goes quickly!

Tips & Tricks (5)
- Avocado Ripeness Hack 🥑Select Hass avocados that yield slightly to gentle pressure but aren't mushy, ensuring perfect creamy texture for your guacamole chicken salad.
- Jalapeño Heat Control 🌶️Remove the seeds and white membranes from the jalapeño to reduce heat while maintaining flavor complexity in your chicken salad.
- Chicken Prep Perfection 🍗Poach or grill chicken breasts ahead of time and let them cool completely before dicing, which helps achieve a more uniform texture and prevents mayonnaise separation.
- Lime Juice Magic 🍋Add fresh lime juice not just for flavor, but to prevent avocado browning and create a brighter, more vibrant chicken salad.
- Seasoning Layer Technique 🧂Mix your dry spices (adobo, chili powder) into the mayonnaise first to create a more evenly distributed and integrated flavor profile.
