Tips & Tricks (5)
- Dry Your Chicken Thoroughly 🌪️Pat the rotisserie chicken completely dry with paper towels before shredding to remove excess moisture, which prevents soggy taquitos and ensures maximum crispiness when air-fried.
- Pre-Toast Your Tortillas 🔥Lightly warm the corn tortillas over a gas flame or in a dry skillet for 10-15 seconds before filling to make them more pliable and less likely to crack during rolling and frying.
- Use Greek Yogurt as a Moisture Seal 🥄Spread a thin layer of Greek yogurt on the inside of each tortilla before adding filling—it acts as a barrier to prevent barbecue sauce from soaking through and keeps taquitos crispy longer.
- Freeze Before Air-Frying ❄️Refrigerate or freeze assembled taquitos for at least 30 minutes (or up to 2 hours) before air-frying to help them hold their shape and achieve an even, golden-brown exterior.
- Bloom Your Spices in the BBQ Sauce 🌶️Mix the smoked paprika, garlic powder, and onion powder directly into the barbecue sauce 5 minutes before using to allow the flavors to fully integrate and intensify throughout the filling.
