In a bowl, combine soy sauce, coconut sugar, sesame oil, garlic, ginger, rice vinegar, gochujang, sesame seeds, green onions, salt, and pepper to create the marinade.

Add thinly sliced beef to the marinade, toss to coat, and let sit for 15–30 minutes.

Heat a pan over medium-high heat and cook the marinated beef in batches until browned and cooked through.

Optionally, remove the cooked meat and reduce the remaining marinade with a touch of soy sauce and honey until thickened. Add beef back in to coat.

Divide cooked jasmine rice evenly among four bowls.

Top each with the cooked beef and chopped kimchi.
