Tips & Tricks (5)
- Choose Chicken Thighs for Superior Moisture 🍗Chicken thighs contain more fat and connective tissue than breasts, making them far more forgiving in the Instant Pot and delivering incredibly juicy, flavorful results that won't dry out during pressure cooking.
- Bloom Your Spices in Sesame Oil First 🌸Toast the dried oregano and garlic in sesame oil for 30 seconds before adding other liquids to amplify their aromatic compounds and create a deeper, more complex flavor foundation for your sauce.
- Balance Sweet and Savory with Ketchup Precision ⚖️Use ketchup as your umami anchor rather than just sweetener—its acidity and tomato base prevent the honey and soy sauce from becoming cloying while adding subtle depth.
- Quick Release for Tender Texture 💨Use quick pressure release instead of natural release to stop the cooking process immediately, preventing the chicken from becoming stringy or overcooking during the residual heat phase.
- Finish with Fresh Green Onions Off-Heat 🌿Add sliced green onions only after releasing pressure and opening the pot to preserve their bright, fresh flavor and crisp texture, which contrasts beautifully against the rich, glazed chicken.
