Tips & Tricks (5)
- Pat Dry for Perfect Crust 💧Pat the pork chops completely dry with paper towels before seasoning and searing to ensure a golden, caramelized crust rather than steaming.
- Bloom Your Seasonings in Oil 🌟Toast the Porketta blend and garlic in hot olive oil for 30 seconds before adding the pork to intensify their flavors and prevent burnt spices.
- Don't Move the Meat 🍳Resist the urge to flip or move the pork chops for the first 3-4 minutes; let them sit undisturbed to develop a flavorful golden crust.
- Deglaze with Lemon First 🍋After removing the pork, deglaze the pan with fresh lemon juice before adding broth to cut through richness and brighten the pan sauce.
- Finish Sauce with Cold Butter 🧈Remove the pan from heat and whisk in cold butter cubes at the end for a silky, luxurious pan sauce that coats the pork perfectly.
