Lemon Cake Mix Crinkle Cookies
I love to make these Lemon Cake Mix Crinkle Cookies when life gets busy but your sweet tooth still calls. They come together in minutes with just a handful of ingredients, yet they taste like something you’d fussed over all afternoon. Rolling each one in powdered sugar feels almost nostalgic—like a snow day treat or a bake sale favorite. They’re soft, sweet, and a little bit magical, just the way homemade cookies should be.

- Step 1
Preheat oven to 350F.
- Step 2
Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Step 3
In a large bowl, beat together the cake mix, eggs and vegetable oil until smooth and completely combined, about 2 minutes.
- Step 4
Place the confectioner’s sugar in a small bowl.
- Step 5
Use a 1 1/2 Tablespoon cookie scoop to portion out the cookie batter and roll the cookie dough balls in the confectioner’s sugar until completely coated.
- Step 6
Place the coated cookie dough balls at least 3″ apart on the prepared cookie sheets.
- Step 7
Bake for 10-12 minutes until lightly golden and spread out.
- Step 8
Allow the cookies to cool for 5 minutes on the baking sheet before attempting to remove to a cooling rack or serve.
