Lobster Mac & Cheese
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
2
In a skillet over medium heat, melt 4 tbsp butter. Add lobster meat and toss until well coated and heated through. Remove from pan and set aside.
3
Add remaining 2 tbsp butter and minced garlic to the same pan. Cook until fragrant, about 1–2 minutes.
4
Pour in heavy cream and bring to a gentle simmer. Season with salt and pepper.
5
Add cooked pasta to the cream, followed by cheddar, mozzarella, and Parmesan. Stir until cheese is melted and sauce is creamy.
6
Add a splash of reserved pasta water to loosen sauce if needed. Cook for a few minutes to thicken.
7
Fold in the cooked lobster, stir, and top with additional Parmesan. Serve warm.

Tips & Tricks (5)
- Emulsify with Pasta Water 💧Reserve at least 1 cup of starchy pasta water before draining—it's crucial for emulsifying the cheese sauce and achieving that silky, cohesive texture that clings to every noodle without becoming grainy.
- Toast Garlic in Butter First 🧈Bloom minced garlic in melted butter over medium heat for 1-2 minutes before adding cream to mellow its harshness and infuse the entire sauce with deep, caramelized garlic flavor.
- Add Cheese Off-Heat 🧀Remove the pan from heat before stirring in your cheeses in stages—starting with cheddar and mozzarella, then finishing with Parmesan—to prevent the proteins from breaking and ensure a smooth, velvety sauce.
- Fold Lobster Last for Tenderness 🦞Add the lobster meat in the final 30 seconds after combining pasta and sauce, folding gently to prevent breaking it apart and avoid overcooking its delicate texture from residual heat.
- Season in Layers 🧂Taste and adjust seasoning at three stages—after the cream reduces, after adding cheese, and after combining everything—since each ingredient affects the overall salt and pepper balance differently.
