Preheat the oven to 350°. Mix the pancake mix, milk, syrup, eggs, vanilla in a large mixing bowl.

Fold in the crumbled bacon pieces and chocolate chips.

Pour into greased or lined mini muffin pan. Fill each 3/4th of the way full.

Place the muffin pan in the oven and bake for 12-15 minutes, or until the pancake bites are golden brown and cooked through (a toothpick inserted into the center should come out clean).

Optional: Melt additional chocolate and dip the bites into the chocolate to finish.
