Tips & Tricks (5)
- Starch Water is Your Secret Weapon 💧Reserve 1 cup of pasta cooking water before draining—the starch emulsifies with cream and cheese to create a silky, cohesive sauce that clings perfectly to each strand.
- Toast Your Garlic and Spices First 🔥Bloom the garlic powder, paprika, and onion powder in butter and olive oil for 30-45 seconds before adding liquid to unlock their full aromatic potential and eliminate raw, powdery flavors.
- Add Cheese in Two Stages 🧀Stir in the Fontina and Asiago first while the pasta is still cooking, then finish with Parmesan off heat—this prevents caking and ensures each cheese melts smoothly without becoming grainy.
- Undercook Your Pasta Slightly 🍝Use 1-2 minutes less than package directions since the pasta continues cooking in the simmering broth, preventing it from becoming mushy by the time you serve.
- Fresh Basil at the Very End 🌿Add torn basil just before serving to preserve its delicate flavor and vibrant color—heat destroys basil's essential oils and turns it dark and bitter within seconds.
