Tips & Tricks (5)
- Reserve Pasta Water Before Draining 💧Save 1 cup of starchy pasta cooking water before draining—it's liquid gold for adjusting sauce consistency and helping it cling perfectly to the pasta.
- Bloom Garlic Powder in Fat First 🧈Toast the garlic powder in butter and olive oil for 30 seconds before adding other ingredients to unlock its full depth and eliminate any raw, powdery taste.
- Stir Pesto Into Cream Off-Heat 🌿Remove from heat before mixing pesto into the cream to preserve the vibrant green color and delicate basil flavor—high heat destroys both.
- Use Fresh Basil as Final Garnish ✨Reserve a handful of fresh basil to tear over the finished dish at the table for a burst of fresh, aromatic basil that dried herbs in the base cannot provide.
- Monitor Liquid Levels During Cooking 👀The pasta should finish cooking with just enough liquid remaining to create a creamy sauce—if it's too dry, add reserved pasta water by the quarter-cup until silky.
