Tips & Tricks (5)
- Toast Your Tomato Paste 🍅Sauté the tomato paste in butter and olive oil for 1-2 minutes before adding broth to deepen its flavor and eliminate any metallic taste, creating a richer base for your sauce.
- Bloom Your Dried Spices 🌿Add garlic powder and dried basil to the hot fat before introducing liquids to activate and enhance their flavors, preventing them from tasting flat or dusty in the final dish.
- Reserve Starchy Pasta Water 💧Keep some of the pasta cooking liquid before draining and add it back if the sauce becomes too thick, as the starch naturally emulsifies and creates a silkier, more cohesive sauce.
- Add Cream Off Heat ❄️Remove the pot from heat before stirring in heavy cream to prevent it from curdling or breaking, ensuring a luxuriously smooth and creamy final texture.
- Layer Parmesan at the End 🧀Add half the Parmesan while cooking for flavor integration, then finish with the remaining cheese off-heat so it melts gently without becoming grainy or separated.
