Instructions

First, preheat oven to 350 degrees Fahrenheit and line a bread pan with parchment paper.

In a large mixing bowl, add mashed bananas, eggs and vanilla extract. Stir until combined.

Next, sift in almond flour and tapioca flour. Then add remaining ingredients (except strawberries).

Once mixed, toss 3/4 cups of the strawberries with a tablespoon of tapioca flour. Then, fold in coated strawberries to the batter.

Pour batter into the lined bread pan. Sprinkle remaining strawberries on top.

Bake for 55 to 65 minutes, or until a toothpick inserted comes out clean. If bread is browning on top but isn't done baking, add aluminum foil on top and continue baking.

Finally, remove from oven and cool completely before slicing.
