Instructions
1
Preheat the oven to 325℉. Line a baking sheet with parchment paper.
2
Stir together the oats and pecans. Whisk the maple syrup, brown sugar, vanilla, and olive oil until combined. Add into the dry ingredients and stir until all the oats are coated.
3
Pour the mixture onto the prepared baking sheet and spread into a ½-inch layer. Bake in the preheated oven for 15 minutes before giving the granola a gentle stir with a spatula. Bake for another 7-10 minutes or until lightly golden brown.
4
Let the granola cool on the pan before breaking into bite-sized pieces and storing in an airtight container for up to 1 week. Enjoy!

Tips & Tricks (5)
- Toast Pecans Separately 🥜Pre-toast your pecans in a dry skillet for 3-4 minutes before mixing with wet ingredients to intensify their flavor and prevent them from becoming soggy during baking.
- Stir Every 5 Minutes 🥄Mix the granola every 5 minutes while baking to ensure even toasting and prevent burning on edges while keeping centers soft and crunchy.
- Cool Before Storage 🧊Let the granola cool completely on the baking sheet for at least 15 minutes before transferring to containers; this allows it to crisp up fully and prevents clumping.
- Use Quality Maple Syrup 🍁Invest in pure Grade A or B maple syrup rather than pancake syrup for authentic, rich flavor that truly defines this granola's character.
- Balance Oil Ratio 🫒Use extra virgin olive oil at a 1:1 ratio with maple syrup to achieve the perfect balance of richness and crunch without greasiness.
