Tips & Tricks (5)
- Toast Your Pesto Base 🧈Bloom your garlic in butter for 30-60 seconds before adding pesto to deepen its flavor and reduce any raw garlic harshness, creating a more sophisticated sauce foundation.
- Cook Pasta in Broth, Not Water 🍲By cooking anelli directly in chicken broth instead of water, you infuse every pasta ring with savory depth that eliminates the need for extra seasoning later.
- Temper Your Cream Properly 🥛Add heavy cream slowly off-heat or at low temperature after incorporating pesto to prevent the basil from darkening and the sauce from breaking or becoming greasy.
- Reserve Pasta Water Strategically 💧Save 1 cup of starchy pasta cooking liquid to adjust sauce consistency—this emulsifies the cream and pesto together while thinning without diluting the flavor.
- Layer Basil for Maximum Freshness 🌿Use half your fresh basil in the sauce during cooking and reserve the other half to tear and scatter just before serving, giving you both deep herby flavor and bright, fresh aromatics.
