Pour one Tablespoon of avocado oil into a large skillet, then put the skillet on medium-high heat.

When hot, add the cubed chicken, then sprinkle with salt and pepper. Cook the chicken for about 4 to 5 minutes.

Add broccoli florets, chopped red bell pepper and pineapple pieces to the skillet. Stir and continue cooking for 5 more minutes or until the chicken is cooked through and the vegetables are soft.

When chicken and veggies are cooking, you can prepare the sauce. Combine together soy sauce, pineapple juice, sesame oil, honey, minced garlic, ground ginger, and cornstarch into a small mixing bowl. Using a whisk, mix until thoroughly combined

Add the sauce to a small saucepan and heat on medium heat. Allow the sauce to come to a simmer. Whisk continuously and cook for about 3-4 minutes or until sauce thickens.

Start pouring the sauce over the prepared chicken and veggies. Toss them until they're thoroughly mixed.

Serve pineapple chicken over rice if desired. Garnish with sliced green onions and toasted sesame seeds.
