Tips & Tricks (5)
- Reserve Pasta Water for Silky Sauce 💧Save 1 cup of starchy pasta water before draining, then add it gradually to your tomato sauce to achieve a luxuriously creamy consistency that coats the noodles without relying solely on milk or cream.
- Crisp Pepperoni Before Mixing 🍕Cook pepperoni slices separately in a hot skillet for 2-3 minutes until edges curl and render their oils, then add back to the pasta—this prevents soggy pepperoni and concentrates its flavor throughout the dish.
- Bloom Garlic and Onion in Oil First 🧄Sauté minced garlic and diced onion in olive oil for 2-3 minutes before adding tomato sauce to unlock their aromatic compounds and create a deeply flavorful foundation for the entire bake.
- Undercook Pasta by One Minute 🍝Cook pasta to just under al dente since it will continue cooking in the oven during baking; this prevents mushy, overcooked noodles in your final dish.
- Top with Fresh Parsley After Baking 🌿Sprinkle fresh chopped parsley only after the bake emerges from the oven to brighten the dish with fresh flavor and vibrant color that would otherwise be lost to heat.
