Toss them in a large bowl with 2-4 tablespoons of olive oil, then spread in a single layer flat side down on a parchment-lined baking sheet. Sprinkle with ½ teaspoon sea salt and ¼ teaspoon black pepper. Roast for 25-30 minutes, flipping halfway through.
