Toss them in a large bowl with 2-4 tablespoons of olive oil, then spread in a single layer flat side down on a parchment-lined baking sheet. Sprinkle with ½ teaspoon sea salt and ¼ teaspoon black pepper. Roast for 25-30 minutes, flipping halfway through.

In a small bowl, mix 2-4 tablespoons lime juice, 3 garlic cloves, 1 cup Greek yogurt, ½ teaspoon paprika, ¼ teaspoon cumin, and ¼ teaspoon cayenne. Add ¼ teaspoon salt. Stir until smooth and refrigerate.
