Tips & Tricks (5)
- Dry Your Shrimp Thoroughly 🍤Pat shrimp completely dry with paper towels before cooking to achieve a golden sear and prevent them from steaming in their own moisture.
- Don't Overcook the Shrimp ⏱️Remove shrimp from heat the moment they turn opaque and curl into a C-shape (about 2-3 minutes per side); overcooked shrimp becomes rubbery and loses its delicate texture.
- Reserve Pasta Water Before Draining 💧Save at least 1 cup of starchy pasta water to emulsify with butter and oil, creating a silky sauce that clings beautifully to both pasta and shrimp.
- Finish with Cold Butter for Richness 🧈Whisk a final knob of cold butter into the sauce at the very end off-heat to create a luxurious, glossy finish that elevates the dish to restaurant quality.
- Bloom Garlic and Red Pepper Flakes in Oil 🌶️Toast minced garlic and red pepper flakes in olive oil for 30-60 seconds until fragrant before adding wine, unlocking their full flavor potential and preventing burnt, bitter garlic.
