Instructions
1
First, make the pizza crust. In the bowl of your stand mixer, add all of the pizza crust ingredients. Beat for 1 minute or until the dough is smooth and sticky.
2
Scrape down the sides of the bowl. Cover the bowl with a towel and let rise for 60 minutes. Then, refrigerate for 30 minutes.
3
Preheat the oven to 500 degrees Fahrenheit. Line a baking pan with parchment paper.
4
Divide the dough into two balls and save one for later use.
5
Place one ball of dough on the piece of parchment paper. Grease your hands and press the dough into a 10 inch circle.
6
Bake for 10 minutes. Remove the pan from the oven.
7
Immediately top with the chocolate chips. Smooth into an even layer of melted chocolate. Then, sprinkle the marshmallows on top.
8
Return to the oven for 5 to 7 minutes, or until the marshmallows have become toasted. If needed, use a kitchen torch or lighter to further toast the marshmallows.
9
Remove from the oven. Lastly, top with graham cracker crumbles.

Tips & Tricks (5)
- Toast Graham Crackers First 🍯Lightly toast your gluten-free graham cracker crumbles in a dry pan for 2-3 minutes before sprinkling on top to intensify their flavor and prevent them from becoming soggy from the melted chocolate and marshmallows.
- Bloom Your Yeast Properly 🫧Ensure your warm water is between 110-115°F when mixing with instant yeast—too hot kills the yeast, too cool prevents proper activation for a light, airy crust.
- Chocolate Placement Strategy 🍫Spread melted dark chocolate on the crust immediately after it comes out of the oven, then add marshmallows and toast under the broiler for 1-2 minutes to achieve perfectly melted chocolate with gooey, browned marshmallows simultaneously.
- Use Room Temperature Olive Oil 🫒Add olive oil at room temperature to your dough rather than warm oil, as it helps develop gluten structure more effectively in gluten-free flour, resulting in a chewier, more cohesive crust.
- Strategic Marshmallow Layering 🔝Distribute mini marshmallows evenly across the pizza and slightly overlap them so they melt together into a gooey layer rather than staying as individual pieces—this creates that authentic s'mores texture.
