Tips & Tricks (5)
- Whip Feta While Cold 🧊Blend cold feta with heavy cream and broth until impossibly silky, then gently warm over low heat to prevent the feta from becoming grainy or separating.
- Reserve Pasta Water First 💧Save at least 1 cup of starchy pasta water before draining—use it gradually to achieve the perfect sauce consistency and help it cling beautifully to each strand.
- Truffle Oil Goes Last 🍄Add truffle oil only after plating or in the final 30 seconds off-heat to preserve its delicate, complex aromatics which dissipate quickly under high temperatures.
- Bloom Garlic in Butter 🧈Toast minced fresh garlic in melted butter for 2-3 minutes until fragrant but not browned, creating a deeply flavorful base that elevates the entire sauce.
- Balance Salt Carefully ⚖️Taste as you build the sauce since feta is already salty—use garlic powder and onion powder sparingly to layer umami without oversalting and overpowering the delicate truffle notes.
