Tips & Tricks (5)
- Pat Dry for Maximum Crispiness 💧Pat chicken wings completely dry with paper towels before seasoning and cooking—moisture is the enemy of crispy skin, whether baking or air frying.
- Separate Flats and Drums 🍗Remove the wing tips and separate flats from drums before cooking, as they cook at different rates and separate pieces achieve superior crispiness on all sides.
- Season Early and Generously 🧂Season wings with sea salt and ground pepper 15-20 minutes before cooking to allow the seasoning to penetrate the meat and enhance natural flavors before sauce application.
- Toss Halfway Through Cooking 🔄Flip and shake the wings halfway through baking or air frying to ensure even browning, crispy skin on all surfaces, and consistent cooking throughout the batch.
- Sauce After Cooking, Not Before 🎯Apply BBQ or buffalo sauce immediately after cooking while wings are hot and crispy, tossing quickly to coat evenly—this prevents sogginess and maintains that coveted crunch.
