Baked Zucchini Chips
Instructions
1
Preheat the oven to 475°F.
2
Spray a baking sheet with nonstick cooking spray. Set aside.
3
Cut zucchini into 1/4-inch thick slices.
4
In a shallow bowl, stir together the breadcrumbs, pepper, and Parmesan cheese.
5
Place the egg whites in a small mixing bowl. Dip the zucchini slices into the egg whites, then dredge them in the breadcrumb mixture to coat both sides. Arrange the slices on the prepared baking sheet.
6
Bake the zucchini on middle rack of oven for 5 minutes.
7
Using a spatula, flip the slices over. Continue baking until browned and crispy, 5-10 minutes.
8
Check to see that chips are done. Remove from oven or add time as needed.
9
Serve with marinara sauce or ranch dressing for dipping, if desired, and sprinkle with a little extra Parmesan if you like.

Tips & Tricks (5)
- Pat Dry for Maximum Crispiness 🌊After slicing zucchini, pat each piece thoroughly with paper towels to remove excess moisture, which prevents soggy chips and ensures a crunchier, crispier texture after baking.
- Double-Coat Technique for Extra Crunch 🥚Dip zucchini slices in egg whites, then breadcrumbs, then back into egg whites and breadcrumbs again for an ultra-crispy, restaurant-quality coating that won't fall off.
- Use Panko for Superior Texture ✨Substitute regular breadcrumbs with panko breadcrumbs mixed with your seasoned coating for lighter, airier, and significantly crispier chips with better structural integrity.
- Arrange on Wire Racks 📍Place zucchini chips on a wire rack set over your baking sheet instead of directly on the sheet, allowing air to circulate underneath for even crisping on all sides.
- Increase Oven Temperature for Crispiness 🔥Bake at 425°F instead of standard temperatures to achieve a golden, crispy exterior in just 10-12 minutes while keeping the interior tender and preventing moisture buildup.
