Cajun Baked Chicken Wings
Instructions
1
Preheat the oven to 425°F.
2
Line a large baking sheet with aluminum foil and place a roasting rack on top. Cover the rack with another sheet of foil and spray with nonstick cooking spray. Use a knife to poke holes all over the foil.
3
Pat the chicken wings dry with paper towels. Place the chicken wings in a gallon-sized zip-top bag. Drizzle the olive oil into the bag. Sprinkle in the salt. Seal the bag and shake to evenly coat the chicken wings.
4
In a small bowl, whisk together the spices, sugar, and black pepper. Sprinkle the spice mixture into the zip-top bag. Seal the bag and shake to evenly coat the chicken.
5
Arrange the chicken wings on the foil-covered roasting rack.
6
Bake the chicken wings on middle rack of oven until browned and crispy, 45-50 minutes.
7
Check to see that chicken wings are done. Remove from oven or add time as needed.
8
Allow the chicken wings to rest on roasting rack for 3 minutes. Plate and serve immediately.

Tips & Tricks (5)
- Pat Dry for Crispier Wings 🪶Pat chicken wings completely dry with paper towels before coating—moisture prevents the spice crust from adhering properly and creates steam that blocks browning.
- Bloom Your Spices in Oil 🌶️Mix your Cajun spices with the olive oil to create a paste before coating the wings, which distributes flavors evenly and helps the spices caramelize during baking.
- Arrange on Elevated Racks 📍Place wings on a wire rack set over your baking sheet rather than directly on the pan—this allows heat to circulate underneath for crispier, evenly-cooked skin all around.
- Finish Under the Broiler ✨In the final 2-3 minutes of baking, switch to high broil to caramelize the spice coating and deepen the smoky flavor without overcooking the meat.
- Toast Spices Before Mixing 🔥Lightly toast your ground spices (cumin, paprika, cayenne) in a dry pan for 30 seconds before mixing with oil to intensify their aromatic compounds and Cajun depth.
