Tips & Tricks (5)
- Pound Your Chicken Evenly 🔨Pound chicken breasts to uniform thickness (about ¾ inch) to ensure even cooking and prevent dry edges while the center finishes cooking.
- Bloom Your Cajun Spices 🌶️Toast your Cajun seasoning in the pan for 30 seconds before adding chicken to intensify flavors and create a more complex, professional-tasting crust.
- Emulsify Your Cream Sauce Properly 🧈Whisk butter and garlic over low heat before adding cream, and always add pasta water gradually while whisking to create a silky, stable sauce that won't break.
- Reserve Pasta Water Before Draining 💧Grab at least 1 cup of starchy pasta water before draining—this liquid is essential for achieving the perfect creamy consistency and helps the sauce cling to each strand.
- Tent and Rest Your Chicken 🍗Let seared chicken rest for 5 minutes tented with foil before slicing to keep it juicy; this prevents the flavorful juices from running out onto the plate.
