Cajun Shrimp, Sausage, and Vegetable Sheet Pan
Instructions
1
Combine the rice, water, salt, and olive oil in a rice cooker and cook according to the manufacturer's instructions. When done, hold the cooked rice on the warm setting until ready to serve.
2
Preheat the oven to 400°F.
3
In a large mixing bowl combine the shrimp, sausage, zucchini, yellow squash, asparagus, bell peppers, salt, and pepper. Add the Cajun seasoning and olive oil and toss until coated.
4
Spread the mixture evenly between 2 large sheet pans.
5
Bake the sheet pan meal on middle rack of oven until shrimp are pink, sausage is cooked through, and vegetables are fork tender, 20-25 minutes.
6
Check to see that dish is done. Remove from oven or add time as needed.
7
Allow to cool slightly, and serve over the finished rice. Leftovers can be stored in an airtight container for up to 1 week.

Tips & Tricks (5)
- Sear Sausage First for Flavor 🌟Brown the sausage separately for 2-3 minutes before adding to the sheet pan to render fat and build a flavorful crust that seasons everything.
- Stagger Your Vegetables 🥘Add denser vegetables like bell peppers first, then asparagus and squash later to ensure everything finishes cooking simultaneously and maintains proper texture.
- Pat Shrimp Completely Dry 💧Use paper towels to remove all surface moisture from shrimp before seasoning and cooking to achieve proper browning and prevent steaming.
- Toast Cajun Seasoning in Oil 🔥Warm the Cajun spices in the olive oil for 30 seconds before coating ingredients to bloom the spices and deepen their complex flavors exponentially.
- Add Shrimp Last for Perfect Texture 🦐Don't add shrimp until the final 4-5 minutes of cooking—they require minimal time and adding them too early results in rubbery, overcooked shrimp.
