Tips & Tricks (5)
- Undercook Your Pasta Shells 🍝Cook jumbo shells to al dente (about 1-2 minutes under the package time) since they'll continue cooking in the oven, preventing mushy results.
- Drain Ricotta for Creaminess 🧀Pat dry your ricotta cheese with paper towels before mixing to remove excess moisture, ensuring a perfectly creamy filling that won't make shells soggy.
- Reserve Pasta Water for Sauce 💧Save 1 cup of starchy pasta water to thin your marinara sauce if needed—it creates better coating and helps flavors meld beautifully.
- Mix Cheeses with Fresh Parsley 🌿Add finely chopped fresh parsley directly to your cheese mixture before filling to distribute herbaceous flavor throughout every shell instead of just topping.
- Layer Sauce Before and After 🥘Spread a thin layer of marinara on the bottom of your baking dish before adding shells, then sauce the tops—this prevents sticking and ensures even flavor distribution.
