Chicken Zucchini Pasta Meal Prep
Instructions

Preheat oven to 400°F (200°C).

Season chicken breasts with salt, pepper, paprika, and garlic powder.

Air fry the chicken at 375°F (190°C) for 20–25 minutes or until internal temperature reaches 165°F (74°C).

Place halved tomatoes, garlic head, and shallot on a baking sheet. Drizzle with olive oil and sprinkle with salt.

Roast in the oven for 25–30 minutes.

In a blender, combine roasted garlic (cloves removed), tomatoes, shallot, and chicken broth. Blend until smooth.

Season the sauce with Italian seasoning, salt, and pepper to taste.

Spiralize zucchini and sauté in a pan over medium heat until just tender.

Slice cooked chicken and mix zucchini noodles with the sauce.

Top with sliced chicken and garnish with extra seasoning if desired.
