Tips & Tricks (5)
- Temper Your Cream with Pasta Water 💧Add reserved pasta water to your cream sauce gradually while whisking to prevent the heavy cream from breaking or curdling when you combine it with the hot pasta and cheese.
- Pound Your Chicken for Even Cooking 🔨Gently pound chicken breasts to uniform thickness before seasoning and searing, ensuring they cook evenly and stay juicy rather than drying out at the edges.
- Build Your Sauce Off-Heat 🔥Remove the pan from heat before adding Parmesan cheese and whisking it into the cream sauce—this prevents the cheese from becoming grainy or separating from the sauce.
- Toast Your Garlic in Butter First 🧈Bloom minced fresh garlic in melted butter for 30-60 seconds before adding cream to infuse the sauce with deep, complex garlic flavor rather than raw, harsh notes.
- Finish Pasta in the Sauce, Not the Pot 🍝Toss your drained al dente pasta directly into the Alfredo sauce for the final minute, allowing the noodles to absorb flavor and achieve a silky, cohesive coating throughout.
