Tips & Tricks (5)
- Emulsify with Pasta Water 💧Reserve 1 cup of starchy pasta water and add it gradually to your cream sauce while stirring—this helps emulsify the pesto and cream, creating a silkier, more cohesive sauce that clings beautifully to the pasta.
- Low Heat for Pesto Preservation 🌿Keep your heat at medium or medium-low when incorporating pesto to prevent the basil from oxidizing and turning dark; high heat destroys the vibrant color and fresh herbal notes.
- Add Burrata at the Last Second ❄️Place cold burrata on individual plated servings just before serving, not in the hot pan—the residual warmth will soften it beautifully while preserving its creamy center and delicate texture.
- Balance Pesto Intensity with Butter 🧈Use equal parts butter and olive oil when sautéing garlic to create a rich base that mellows the pesto's intensity without overwhelming the cream; this creates better balance and prevents a one-note herby flavor.
- Toast Garlic Gently for Sweetness 🧄Cook minced garlic over medium heat for only 1-2 minutes until fragrant but not browned—this brings out its sweet, mellow notes instead of harsh, bitter flavors that can clash with the delicate burrata.
