1

2
Season steak with salt, pepper, and garlic powder. Heat ½ tbsp olive oil in a skillet over medium-high heat and sear steak until desired doneness. Remove and let rest.
3
In the same skillet, sauté sliced onions in a bit of oil or cooking spray until soft and caramelized. Optionally add a splash of balsamic vinegar or Worcestershire.
4
For the sauce, blend together Greek yogurt, cottage cheese, lemon juice, parsley, chives, garlic powder, and salt until smooth.
5
Assemble each bowl with a layer of roasted potatoes, seared steak, and sautéed onions. Drizzle with creamy herb sauce and serve warm.

Tips & Tricks (5)
- Dry Brine Your Steak 🧂Season your lean sirloin or flank steak with salt and garlic powder 40 minutes before cooking to allow enzymatic breakdown of proteins, resulting in incredibly tender meat and deeper seasoning penetration.
- Crisp Potatoes with Parmesan Crust 🥔Toss roasted potatoes with Parmesan cheese in the final 3 minutes of baking while they're still hot, ensuring the cheese melts into a golden, savory crust rather than burning on top.
- Build Your Herb Sauce Cold 🌿Prepare the Greek yogurt and cottage cheese sauce while ingredients are still cold and whisk in fresh herbs just before serving to maintain vibrant color and prevent the sauce from separating.
- Caramelize Onions Separately 🧅Cook your yellow onions low and slow in olive oil for 15-20 minutes until deeply golden, keeping them separate from steak cooking to prevent steam and achieve true caramelization with concentrated sweetness.
- Rest and Slice Against the Grain 🔪After resting for 7 minutes, slice your flank or sirloin steak against the grain at a 45-degree angle to dramatically increase tenderness and improve texture in every bite.
