Garlic Roasted Cauliflower
Instructions
1
Preheat the oven to 400°F.
2
Line a large baking sheet with parchment paper.
3
Make sure the cauliflower florets are roughly 1 inch wide, and arrange them on the baking sheet.
4
Drizzle the cauliflower with olive oil. Sprinkle with salt and black pepper.
5
Use a rubber spatula to toss the cauliflower until it is evenly coated in the oil.
6
Roast on middle rack of oven for 15 minutes. While the cauliflower roasts, finely mince the garlic cloves.
7
Open the oven and sprinkle the garlic over the cauliflower. Toss lightly with a rubber spatula to distribute the garlic. Continue roasting until garlic is fragrant and cauliflower is crisp-tender, 8-10 minutes.
8
Check to see that cauliflower is done. Remove from oven or add time as needed.
9
Serve immediately.

Tips & Tricks (5)
- Dry Your Florets Thoroughly 💧Pat cauliflower completely dry with paper towels after washing to ensure crispy edges and proper browning instead of steaming.
- Slice Garlic Thin for Even Distribution 🔪Thinly slice garlic cloves rather than mincing to prevent burning and create golden, flavorful crispy bits throughout the roasted cauliflower.
- Oil and Season Before Roasting 🫒Toss florets with olive oil, salt, and pepper on a cold sheet pan, then transfer to a preheated 425°F oven for maximum caramelization and flavor development.
- Space Florets for Crispiness 📏Arrange cauliflower in a single layer with adequate spacing to allow hot air circulation and achieve crispy, caramelized exteriors rather than steamed results.
- Finish with Fresh Garlic Oil ✨Drizzle roasted cauliflower with a finishing oil infused with raw minced garlic and a pinch of fleur de sel immediately after removing from the oven for enhanced depth and freshness.
