So easy! Perfect comfort meal for the winter.

This One Pot Lasagna Soup brings all the comforting flavors of classic lasagna into a warm, hearty bowl. Rich tomato sauce, seasoned ground beef, tender lasagna noodles, and melty cheese come together in a single pot. A touch of cream makes the broth extra luscious, while basil, garlic, and Parmesan round out the flavor. Top it off with ricotta and more cheese for a comforting meal that’s easy enough for a weeknight but tastes like it simmered all day.

Heat olive oil in a large pot over medium heat. Add diced onion, season with salt and pepper, and cook until softened.
Add minced garlic and cook until fragrant, about 1 minute.
Add ground beef and season with garlic powder, onion powder, paprika, basil, salt, and pepper. Cook until browned.
Stir in tomato paste and cook until slightly darkened.
Add tomato sauce and bring to a simmer. Stir in 2 cups chicken broth.
Add broken lasagna noodles and additional broth as needed to ensure pasta is submerged.
Simmer uncovered for 10–12 minutes, or until pasta is tender.
Stir in mozzarella, Parmesan, and fresh basil. Add heavy cream if desired and stir to combine.
Serve hot topped with ricotta, more cheese, and extra basil if desired.
