One Pot Lasagna Soup
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion, season with salt and pepper, and cook until softened.

Add minced garlic and cook until fragrant, about 1 minute.

Add ground beef and season with garlic powder, onion powder, paprika, basil, salt, and pepper. Cook until browned.

Stir in tomato paste and cook until slightly darkened.

Add tomato sauce and bring to a simmer. Stir in 2 cups chicken broth.

Add broken lasagna noodles and additional broth as needed to ensure pasta is submerged.

Simmer uncovered for 10–12 minutes, or until pasta is tender.

Stir in mozzarella, Parmesan, and fresh basil. Add heavy cream if desired and stir to combine.

Serve hot topped with ricotta, more cheese, and extra basil if desired.
