Line a large baking sheet with parchment paper.

Dice the potatoes into 1/2-3/4-inch pieces. Finely dice the red onion and bell peppers.

Tips & Tricks (5)
- Cut Potatoes Uniformly 🔪Dice all potatoes and peppers into roughly ½-inch cubes to ensure even cooking and consistent texture throughout the sheet pan.
- Dry Potatoes Before Roasting 🌊Pat potatoes completely dry with paper towels after washing to remove surface moisture, which allows for maximum crispiness and browning.
- Preheat Sheet Pan and Oil 🔥Place your sheet pan with olive oil in a 425°F oven for 5 minutes before adding potatoes—this creates an immediate sear for superior crispiness.
- Season Potatoes Before Roasting 🧂Toss potatoes with salt, pepper, and spices immediately after coating with oil so seasonings adhere evenly rather than settling to the bottom.
- Stir Halfway Through 🥄Shake or stir the pan at the 15-minute mark to ensure all sides crisp evenly and prevent sticking on the bottom of the sheet.
